Cajun Salmon Pasta

 

Cajun Salmon Pasta – Salmon fillets are coated in my homemade Cajun spice mix and served with a creamy, spicy sauce. This would also work really well with chicken instead of salmon. You can buy Cajun spice mix in shops, but if you have all the ingredients then you might as well make your own – it also means you can adjust the ingredients to your liking.

Ingredients:

For the Cajun spice mix:

  • 2 tablespoons of onion powder, garlic powder and paprika (smoked or normal)
  • 1 tablespoon cayenne pepper
  • Teaspoon of salt, pepper, dried basil, dried oregano and dried thyme

For the Cajun Salmon Pasta :

  • 2 salmon fillets (skin on or off is fine)
  • 4 spring onions, finely sliced
  • 1 pepper (any colour) finely diced
  • 2-3 garlic cloves, crushed
  • 250ml chicken stock
  • 4 heaped tablespoons creme fraiche (or use 200ml double cream)
  • Two heaped tablespoons pickled jalapeños, roughly chopped
  • 30g grated cheddar or Parmesan
  • Salt and black pepper
  • Butter
  • Olive oil
  • 200g pasta 

Method:

    Mix together the Cajun spice mix ingredients. Add two tablespoons to a bowl and mix in two tablespoons of olive. Rub all over the salmon fillets.
    Heat the grill to high for the salmon fillets. Grill for around 7-10 minutes until cooked through but still pink in the middle. The best way to test is by using a probe thermometer. The temperature inside should be 50C.
    Meanwhile, cook the pasta in salted boiling water according to packet instructions, reducing the time by a couple of minutes.
    In a large saucepan, add a tablespoon of butter along with the spring onions, pepper, garlic and a tablespoon of the Cajun spice mix. Cook for 3-4 minutes until just softened.
    Add the chicken stock and creme fraiche. Simmer for 5 minutes. Add the pasta, the grated cheese and the chopped jalapeños and stir to combine until the cheese melts.
    Season the sauce with a little salt and black pepper. Top the pasta with the grilled salmon fillets.
    Serve the Cajun Salmon Pasta right away!
