Tomato and Garlic Seafood Pasta. A very quick and easy pasta dish with the taste of the sea. A variety of seafood is tossed through pasta and a sauce made from cherry tomatoes, capers, garlic and parsley. Perfect for a weekday dinner! I have used a packet of frozen seafood mix here which is a perfect buy for quick seafood dinners. You could use any mixture of seafood you wish though. DIFFICULTY LEVEL ROOKIE
Ingredients
- 300g seafood mix – I used a mixture of prawns, scallops, mussels and squid, defrosted
- 100g cherry tomatoes
- 150g linguine
- 1 Lemon
- 2 garlic cloves, finely sliced
- Pinch of chilli flakes
- Capers
- Salt and pepper
- Garlic oil
Method
- Cook the pasta according to packet instructions
- When the pasta is just about cooked, heat a large frying pan over a high heat
- Add a splash of garlic oil and allow to heat for a minute.
- Add the sliced garlic, capers, the zest of the lemon and chilli flakes and stir fry for one minute
- Add the seafood and tomatoes and fry until the seafood is cooked and tomatoes have begun to fall apart
- Drain the pasta and toss through the sauce. Squeeze over the juice of the lemon, drizzle a little more garlic oil over and serve into bowls.
