Sriracha Honey Salmon Noodles
A simple salmon recipe using honey and spicy Sriracha, served with noodles and stir fried vegetables. A sweet, spicy and healthy dinner.
The Recipe
The recipe for Sriracha Honey Salmon Noodles could not be simpler. The whole dish from start to finish takes less than thirty minutes. First, coat the salmon in a sauce made from Sriracha chilli sauce, honey and garlic. For extra flavour, marinade the salmon for thirty minutes. If tight for time, cook the salmon right away. The salmon is best when grilled for 10-15 minutes, to crisp the skin and cook the flesh until it is just opaque but not dry. Cook a nest of noodles per person in salty boiling water. Whilst the noodles are cooking, stir fry some vegetables for just a minute or two so that the crunch is retained. Toss the noodles with some sesame oil, soy sauce and the vegetables and top with the Sriracha Honey Salmon.
Tips
- Sriracha is a hot chilli sauce made from sun-ripened Thai red chillies. Flying Goose is a great brand of the sauce.
- Any stir fried vegetable can be used in the noodles. Broccoli, spring onions, carrots or courgette would all work well.
- Use rice noodles to make it gluten free.
- Cook the salmon and stir fried vegetables in an air fryer if you have one. The salmon takes around 10 minutes and the vegetables around 2-3 minutes.
- This recipe would also work for chicken, but chicken will take longer to cook.
- Use sustainably sourced fish. If in Aberdeen, try out Peterhead Fish Company or Amity Fish Company
