The Recipe – Sausage Traybake
This recipe requires minimal preparation and only one roasting dish. It doesn’t get much easier or quick than this. Start by adding sausages and olive oil to a large roasting tray – like this one. Place in the oven to heat up for 5 minutes. This gives the sausages time to release some of their oils and heats up the roasting tray for the other ingredients. The roasting dish should be hot enough that the remaining ingredients sizzle when added. Meanwhile, thinly slice some new potatoes (so they cook in time) and thickly slice a fennel bulb. Add the potatoes and the fennel to the roasting tin with fennel seeds for extra fennel flavour, chilli flakes for some heat and a splash of white wine. Put back into the hot oven for a further twenty minutes or so, and its ready to serve. A simple, delicious and easy dinner.
Tips
- Use high quality sausages with at least 80% pork.
- Leave out the chilli flakes for less heat.
- Use peppers, red onions or apples for extra vegetables.
- Leftovers will keep for two days in the fridge.
- Vegetarian sausages also work well.

Sausage, Fennel and Potato Traybake
Ingredients
- 6 Sausages
- 1 tbsp Olive oil
- 8 New Potatoes Sliced thinly
- 1 Fennel Bulb Thickly sliced into rounds
- 1 tbsp Fennel seeds
- 1 tbsp Chilli flakes optional
- 100 ml White wine
Instructions
- Pre heat the oven to 200C. Place the sausages in a large roasting tin and drizzle over the olive oil.
- Once the oven is hot, add the roasting tin with the sausages and heat for 5 minutes.
- Meanwhile, prep the new potatoes and fennel. When the sausages have had 5 minutes, add the sliced potatoes, sliced fennel, fennel seeds and chilli flakes (if using). Season with a little salt and black pepper. Give everything a good toss and then pour in the white wine. Place back in the oven for around 20 minutes until everything is golden brown.
- Serve the Sausage, Fennel and Potato Traybake with crusty bread, or just on its own.
