Tomatillo Salsa Verde is my favourite Salsa recipe. Tomatillo Salsa is vibrant green, fruity and hot. Tomatillo’s are a fruit used a lot in Mexican and South American cuisine. Although they look and sound like a green tomato, they are different and shouldn’t be mistaken for one. They have a sharp, tart flavour and unlike a red tomato, aren’t as sweet. Before use, the wispy husk should be removed and the tomatillo should be rinsed with warm water to get rid of the sticky residue that forms on the skin.
This recipe for Tomatillo Salsa firstly roasts tomatillos, onion, chilli, garlic and lime before the whole lot is blitzed with fresh coriander to make Tomatillo Salsa .

RECIPE
Preheat the oven to 220C. Roast approx 15 tomatillos, one or two green jalapeño chillies, 3 cloves of unpeeled garlic, one halved lime and half a chopped white onion in a large roasting dish for 10-15 minutes. Allow to cool slightly before blitzing all the ingredients (just the juice of the lime) with a bunch of fresh coriander and a good grind of salt, to a Salsa consistency.
Serve the Tomatillo Salsa alongside Mexican dishes.
