Baked Feta with Tomato and Peppers – When feta cheese is baked in the oven it becomes soft, oozy and creamy. Paired with a roasted tomato sauce flavoured with garlic, peppers and olives this dish reminds me of warm Mediterranean evenings. I also added honey which gives a sweetness to the dish. I was kindly gifted Wild Flower Honey from Whole Foods Online and it is the perfect honey for this dish as it has a lovely fragrance and is not overly sweet. My Baked Feta recipe would work well for a platter of party food, as a starter for four or a main for two. Serve by spreading the Baked Feta on warm crusty bread and top with the Tomato, Pepper and Olive sauce.
Recipe
Serves 4 as a starter or 2 as a main
Difficulty level: Rookie
Ingredients:
- 1 block of Feta Cheese
- 400g cherry tomatoes on the vine
- 2 garlic cloves, finely chopped
- Handful of olives (any kind), sliced.
- 1 green or yellow pepper, finely sliced
- Heaped tablespoon of honey (I used Raw Wild Flower Honey from Whole Foods Online)
- Dried oregano
- Olive oil
- Salt and pepper
Method:
- Heat the oven to 180C
- Put a good glug of olive oil in a baking dish and place in the tomatoes, pepper, garlic and olives. Nestle the feta on top and season with a sprinkling of oregano, salt and pepper.
- Bake for 20-25 minutes.
- Serve with crusty white bread.
