This is the second recipe review I have done after making Monica’s Spice Diary’s Chicken Kathi Rolls in January. I loved sharing a fellow food blogger’s recipe on my page and trying something new!
This week I made Maverick Baking‘s Best Ever Nutella Brownies and I was not disappointed. If you love a fudgy, dessert-style brownie this is the recipe for you! See how I got on and get the link for the recipe below.
Kelly, of Maverick Baking, is a fellow Aberdeen based food blogger and like me, is also a solicitor to be! However, as her title suggests, she focuses on the sweet side of things whereas the majority of my recipes are savoury. Her conversational tone comes through so well in all her blog posts and recipes and articles are a pleasure to read and follow.
She is also a Youtuber, frequently posting video reviews on exciting and unusual new products, for example Lemon Drizzle Kit Kats.
I have been following Kelly since I started out with Documenting My Dinner and always crave so many of her creations. Her constant sweet treat Instagram updates leave me vowing to make every single thing with hlee Carrot Cake Muffins, Red Velvet Cheesecake and Reeses Chocolate and Peanut Butter Cup Cookies.
THE RECIPE
It was tricky to pick a recipe to review, but her recipes are in easy-to-navigate sections and I eventually settled on Best Ever Nutella Brownies and I’m so glad I did. They were most definitely the ultimate Nutella treat!
These brownies were so easy to make. The recipe was great to follow and although it did use a few bowls leading to a lot of melted chocolate needing washed up, it was worth it. The slight crunch of the exterior lead to a soft, moist and fudgy centre- for me the perfect brownie! Full of chocolatey flavour from both Nutella and milk chocolate, they were such a treat. They would be the perfect brownie served as a dessert with ice cream and extra melted hot Nutella to spoon over.
The recipe involved melting chocolate and butter together in a bowl over simmering water- I definitely recommend this method for melting chocolate rather than the microwave where it can so easily seize up, ending up a grainy mess.
In a separate bowl, you mix together the eggs and sugar before pouring the melted chocolate over. Then you mix in the remaining ingredients: flour, cocoa powder and salt. It was at this point I realised I had no plain flour so used self raising, I’m not sure it would’ve made much difference anyway as it’s a small amount. You are also meant to add hazelnuts, but I decided to omit them and to be honest, I didn’t miss them.
Once the mixture is poured into the prepared tin (I greased it but did not use greaseproof paper and they came out okay, but watch if your tin is not non-stick) the best part – Nutella- comes next and was the most interesting part for me. Rather than mixing the Nutella in, it is spooned over the top and mixed in gently with a knife, creating a marbled effect.
They took a while to cook, so make sure you have plenty time and aren’t feeling too greedy. Mine took the whole hour to cook properly and then you need to leave them to cool for a further hour. I found out the hard way this step was very important- I was greedy and began to outturn the brownies within half an hour and they half collapsed- this is why the photo of them could be prettier- don’t make the same mistake as me!
I also skipped the extra Nutella on top but it wasn’t really needed, they were delicious and moreish without it.
These brownies were a simple recipe that didn’t take a lot of effort, but did make a lot of mess! If you don’t mind washing up (or have a dishwasher like me) then the mess is absolutely outweighed by how delicious these are. I’d go as far to say that I will be swapping my regular go-to brownie recipe from Sally’s Baking Addiction to these. Thanks Maverick Baking!!
