Gin Pasta – A take on the classic pasta ala vodka, but with my tipple of choice, gin! A very simple recipe but comforting and flavoursome none the less. Let me know if you give it a go!

Ingredients
- 100g Pasta (penne or fusilli work best)
- 1 shallot, finely chopped
- 1 clove of garlic, finely chopped
- 5 tablespoons of tomato purée
- 150ml passata
- 200ml gin
- 100ml double cream
- 50g Parmesan, grated
- Salt and pepper
- Olive oil
METHOD
- Put a large frying pan over a medium heat. Pour in a couple tablespoons of olive oil and sauté the shallot and garlic for 10 minutes until really soft but not coloured.
- Add the tomato purée and cook, stirring for a couple of minutes.
- Add most of the gin, leaving a couple of tablespoons, and the pasatta. Increase the heat to medium high and allow to bubble for around 10 minutes.
- Meanwhile, cook the pasta according to the packet instructions. Make sure to add to boiling water and don’t overcook.
- After about 10 minutes, add the double cream and remaining gin to the sauce and stir to combine.
- Season with salt and pepper and add most of the grated parmesan, leaving some for serving.
- Place into bowls and serve topped with Parmesan!
