A simple sweet and sticky way to cook your carrots and parsnips this Christmas….
Ingredients:
- 1 carrot and 1 parsnip per person
- 100ml of maple syrup
- Olive oil
- Salt and pepper
Method:
- Cut larger carrots and parsnips in half. Cut halved parsnips into quarters, if needed to keep them all the same size.
- Fill a pan with salted boiling water and boil the carrots and parsnips for 3 minutes.
- Steam dry until cool. At this point you can freeze and cook on the day.
- Preheat the oven to 200C and heat a large roasting tin (large enough to fit all the carrots and parsnips in a single layer) for 5 minutes.
- Place the carrots and parsnips in the tin and drizzle with olive oil and season with salt and pepper.
- Roast for 20 minutes. Drizzle over the maple syrup and cook for a further 10 minutes.
